Slow Cooked Sweet Balsamic Potato Casserole

Time: 4-8 Hours + 15 Minute Bake

Sweet Butter Oil & Bourbon Maple Balsamic


  • 3-4 Pounds of Large Chopped Sweet Potato

  • 1/4 Cup Dark Brown Sugar

  • 2 Tablespoons Dark Balsamic

  • 4 Tablespoons Irish Gold Unsalted Butter

  • 1 Cup Mini Marshmallows

  • 1/2 Cup Pecan Chunks


Directions: Peel and dice sweet potatoes into 1/2 inch chunks. Place into slow cooker, potatoes, butter, sugar and vinegar. Cover and simmer for 4-6 hours or until tender. Pour contents out into casserole dish and pour marshmallow and pecan chunks over top. Cook in oven for 5-10 minutes on broil on top rack. Serve hot and fresh!
