Roasted Plum Tomatoes With Garlic

  • 3 Pound Ripe Plum Tomatoes

  • 3 Cloves Of Garlic

  • 3 Tablespoons Dark Balsamic Vinegar

  • 1 Tablespoon Olive Oil

  • 5-7 Fresh Bay Leafs (2 Reserve for Garnish)



Heat oven to 450F. Cut the plum tomatoes leaving the tough center core to discard. Place cut tomatoes in a small bowl and add olive oil and transfer into a roasted pan flesh side up.  Place unpeeled garlic in center of tomatoes, Lay split bay leafs around the edge of the roasted pan. Roasted tomatoes until skin starts to brown and char or until tender. Finish tomatoes with dark balsamic reduction of 30 seconds and fresh bay leafs for garnish.
