Foglie d'ulivo. So named because of its shape that resembles an olive leaf, this is a typical Apulian pasta, but widespread in many other parts of Italy. Foglie d'ulivo thanks to its cavity and to the stripes on the surface is suitable to pick any kind of sauce.
Chef Michael will prepare ahead of time blanched and pureed Spinach, Each student will make a portion of pasta with the spinach puree forming a perfect spinach pasta dough. Each student will then make the pasta by hand using a special technique, There will be extra pasta so please bring a container. Each student will cook the pasta and toss it in a mixture of bacon, plum tomatoes and fresh basil!
The cost of this class is $30 and will be limited to 9 seats.
